Deep Fried Turkey

Deep fried turkey is moist and delicious and not at all greasy.
Any kind of Turkey (12 pounds - 20 pounds)
40 or 60 quart pot with turkey frying hardware.

A propane gas tank and burner.
A deep fry thermometer
Use oils that have a high smoke point, such as peanut oil.
Try not to go over 20 pounds
Never fry a turkey indoors. Place the fryer, outdoors, on a level dirt or grassy area.
Don't frying on wood decks.
Always keep a fire extinguisher nearby.

Using a Injector to marinade your turkey.

Any kind of sauce and little water.
Move the needle around the get the marinade into the whole turkey.
Do not over-tighten needle.
Put the whole turkey into the refrigerator for overnight.

Heat the oil to about 325°F and no higher than 350°F
(Very slowly) lower basket into oil with cooking mitts (Highly recommended)
Deep fry usually takes between 30 to 60 minutes
Remove turkey from basket and allow to rest for at least 20 minutes.
