Sweet Potato Soufflé

Recipe

Oven 350 ~ 9x9 or Round or Oval pan

Filling Ingredients:

3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup flour
1 teaspoon vanilla
½ sticks margarine butter (4 tablespoon) soften

Topping:

1 cup brown sugar
1/3 sticks margarine butter, soften
½ cup chopped walnut nuts
1/3 cup flour

Directions:

Mix first ingredients. Place in pan grease (round stone ware pan is good size). Mix topping brown sugar and margarine with pastry blender or folk. Add nuts and flour. Sprinkle over sweet potato mixture. Bake for 35-40 minutes.
